Protein Ice Cream

Ingredients

  • 1 cup unsweetened almond milk, plus more for blending
  • 1 scoop protein powder (see note*)
  • 1 tablespoon unsweetened cocoa powder
  • 1 packet stevia
  • 1/4 teaspoon vanilla extract

Instructions

Combine all ingredients in a small bowl and whisk vigorously until combined well (no lumps). Pour the mixture into an ice cube tray and freeze until solid, about 3 hours. Once it's frozen place the cubes in the blender; blend with as much almond milk as needed (~1/4 cup) to create your desired ice cream texture.

Serve immediately and enjoy!

Notes

*chocolate or vanilla flavors go well here since we're adding cocoa powder. Also, the macros on this will vary depending on the brand of protein powder that you use. If you add more almond milk than the 1 cup, add that to your food log to include those macros.
