Now don't get me wrong, just because I'm sharing a recipe for protein ice cream does not mean that I don't eat real ice cream! 🙂 I usually do eat real ice cream. However, in the beginning of my macro counting journey I found it hard to hit a high protein goal – and adding a fun dessert like this protein ice cream was a nice way to add in 25+ grams of protein! Low calorie, high protein! Score!
You can blend this mixture up to your desired ice cream texture. I found I like it about the consistency of a Wendy's Frosty. Aaand, it doesn't hurt to add some fun sprinkles to the mix too. Sprinkles make everything better, right??
Hope you'll enjoy this one!
Protein Ice Cream
Ingredients
- 1 cup unsweetened almond milk, plus more for blending
- 1 scoop protein powder (see note*)
- 1 tablespoon unsweetened cocoa powder
- 1 packet stevia
- 1/4 teaspoon vanilla extract
Instructions
Combine all ingredients in a small bowl and whisk vigorously until combined well (no lumps). Pour the mixture into an ice cube tray and freeze until solid, about 3 hours. Once it's frozen place the cubes in the blender; blend with as much almond milk as needed (~1/4 cup) to create your desired ice cream texture.
Serve immediately and enjoy!
Notes
*chocolate or vanilla flavors go well here since we're adding cocoa powder. Also, the macros on this will vary depending on the brand of protein powder that you use. Our pre-logged recipe in MyFitnessPal has the following macros listed below. You can save your own “meal” in MFP with the protein powder you use and see what the macros are for yours.
If you add more almond milk than the 1 cup, add that to your food log to include those macros.
