Stroganoff has always been a meal I've enjoyed. I remember my mom making it often when I was young. It continues to be a family favorite! My kids, husband and I all enjoy it. I've taken a family favorite and lightened it up a bit. Lean meat, light sour cream, no butter — but lots of flavor!! Traditionally stroganoff is served over egg noodles or rice. But for a more macro friendly {i.e. lower carb – save the carbs for ice cream :)} meal you can serve it over cauliflower rice, steamed broccoli, or spaghetti squash. (Macros in MFP are for the stroganoff only, not rice/noodles etc)
This also makes great leftovers. The recipe serves 8, but can easily be halved. I love having extra leftovers for lunch or dinner later in the week.

Lightened-Up Beef & Turkey Stroganoff
Ingredients
- 1 pound 90/10 ground beef
- 1 pound 93/7 ground turkey
- 1 medium onion (~170 g)
- 6 cloves garlic, minced
- 16 ounces white mushrooms, chopped
- 1/2 cup (~62 g) all-purpose flour
- 5 cups beef broth (or 5 cups water and 5 teaspoons beef base)
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 6 tablespoons (~90 g) light sour cream (I like to use Daisy brand)
- Rice, cauliflower rice, egg noodles, spaghetti squash etc for serving.
Instructions
In a large deep dish skillet combine beef, turkey, onion and garlic. Cook over medium heat, when it's about half way done cooking, add the chopped mushrooms, continue to cook until the meat is no longer pink and meat is fully cooked. Evenly sprinkle the flour over the meat mixture and stir to combine. Pour beef broth over the meat, stir to combine. Let it simmer for about 5 minutes until it's thickened to desired consistency. Stir in the sour cream when you remove it from the heat. Serve over rice, cauliflower rice, egg noodles, spaghetti squash etc.
