My husband lived in Korea for 2 years and introduced me to Korean when I met him. It took me a few years to enjoy kimchi. But now I love it! I even crave it. But Koren BBQ is easy to fall in love with. It's loved by children and adults all over! Korean BBQ is a beloved Korean dish! It's rich in flavor – savory and sweet. It's a dish the whole family loves! Traditionally Bulgogi (aka Korean BBQ) is made with rib eye or other steak that is sliced thin. You have to freeze the meat and then thaw it just slightly so you can get thin shavings for to put in the marinade. Then it is marinated for a day before it's cooked.
This recipe is a spin off our favorite traditional Bulgogi recipe – but made with ground beef or ground turkey and requires no marinating….so it's a lot faster. In this recipe the meat is simmered in the marinade and gets rich in flavor just as traditional Bulgogi. It's quick and delicious! You can serve it with sticky rice, or whatever rice you have on hand, or with cauliflower rice if you're searching for a lower carb meal. Enjoy!
Korean BBQ Beef or Turkey with Rice
Ingredients
- 2 pound ground beef or turkey (I use 93% lean)**
- 1 large yellow onion, diced (~100 g)
- 3 cloves garlic, minced
- 3 tablespoons granulated sugar
- 1 teaspoon ginger, fresh grated (or 1/4 teaspoon ground ginger)
- 1 tablespoon sesame oil
- 1/4-1/2 teaspoon red pepper flakes
- 2 pinches of ground black pepper
- 1 tablespoon toasted sesame seeds
- 1/3 cup soy sauce (I prefer low-sodium)
- Optional: Green onion and toasted sesame for garnish
- Serve over sticky rice, or whatever rice you prefer, or even cauliflower rice. Wrap in lettuce, serve with steamed veggies and/or kimchi.
Instructions
If you are making steamed rice to serve with this dish, get it started before you start the cooking the meat.
Preheat a large deep dish skillet over medium heat. Add ground beef or turkey, onion and garlic. Cook; breaking meat into bite size pieces and cook it until it's no longer pink. Once meat is fully cooked sprinkle the sugar and ginger evenly over it; stir. Add the sesame oil, red pepper flakes, black pepper, toasted sesame seeds and soy sauce; stir to combine. Simmer, stirring occasionally for 10-15 minutes until flavors can soak into the meat and make it rich and flavorful.
Serve in lettuce wraps, over rice, cauliflower rice, etc.
Notes
**This recipe is saved in MFP with Beef under one entry and Turkey under another entry. MFP Reference (oddly enough the calories in 93/7 ground beef and 93/7 ground turkey are the same, with slightly different macros. We're only looking at 9 calories different when you calculate out each of the macros below, so don't sweat it. Just wanted to explain that in case you are wondering like I was.
