I've found myself super busy this summer! Anyone else? Between getting my workout done, eating breakfast, swim lessons for the kids – and then they day keeps on rolling. It's exhausting some days! Having an easy and quick breakfast is so helpful to get me out the door and also to be properly fueled so I feel good.
This breakfast is easy and can be made in minutes (especially if you buy pre-cooked boiled eggs). It can easily be thrown together the night before or can be made quickly in the morning. If you have an InstantPot, I highly recommend cooking your boiled eggs in it. They peel SOOO easy & quickly too! I put one cup of water in the instant pot, set the trivet in the bottom and put the eggs on top of it in a single layer. Set it to high pressure for 3 minutes, let it natural release for 2 and then manually let the rest of the pressure out. Immediately put them in an ice bath to stop them from cooking. Once they are cool you can peel off the shells and refrigerate. Boiled eggs are easy for breakfast and also snacks! I love keeping them on hand.

High Protein On-the-Go Breakfast
Ingredients
- 1/2 cup (113 g) low-fat cottage cheese (I like Daisy brand)
- 2 large eggs, boiled (add salt & pepper to taste)
- 50 g cucumber
- 50 g blueberries
- 100 g strawberries
- sprinkle of chia seeds (optional & not included in macros)
Instructions
In a bento box or other reusable container add the cottage cheese in one compartment, eggs and cucumbers in another and the berries in the remaining compartment. Make the night before for an easy on the go breakfast.
