Breakfast is one of my favorite meals. I know a lot of people ask “what can I eat for breakfast that isn't all eggs?” This recipe has eggs, but I've added added some seasonings to the eggs that make it super delicious! It's fun to have more than just salt and pepper. You can also toss in some of your favorite herbs in the egg mixture (oregano or Italian seasoning, etc) for some added flavor and for something different. I learned from my mom when I was little that whisking egg with water really makes them light and fluffy. I love doing that when I make any sore of eggs. The light texture of the eggs is delightful! Cheesy Garlic & Egg Breakfast Sandwich
Ingredients
- 1 Sourdough English Muffin (I used Thomas brand)
- 2 large eggs
- 1 tablespoon water
- Sprinkle of garlic powder
- Sprinkle of onion powder
- Salt/Pepper to taste
- 20 g spinach, finely chopped
- 3 thin slices (52 g) deli ham (I used Black Forest)
- 1 wedge light laughing cow cheese
Instructions
Heat a small non-stick skillet over medium low heat. Lightly spray with grease.
While skillet is heating mix egg mixture. In a small bowl combine, eggs, water, garlic powder, onion powder, salt, pepper and chopped spinach. Whisk to combine.
Pour egg mixture into skillet. As it cooks fold it into a square. Flip about half way through cooking to ensure egg is cooked thoroughly.
Place ham in skillet and lightly brown, flipping to heat both sides.
Toast English muffin until lightly browned. Spread both sides with laughing cow cheese. Top with the ham and egg. Enjoy!
