Quick, easy and tasty! This meal is a winner for family dinner and it makes the best leftovers (if you are lucky enough to have any leftovers). My kids loved wrapping the meat up in little “packages” to eat. And there really is something fun about eating something wrapped up in cute little butter lettuce leaves. Feel free to sub in whatever lettuce you have on hand.

Asian Lettuce Wraps
Ingredients
- 4 cloves garlic, minced
- 1 tbsp. minced fresh ginger
- 20 oz. lean ground turkey
- 4 cups finely shredded cabbage
- 2 carrots, julienned
- ½ cup thinly sliced green onions (reserve a few for garnish)
- 2 tbsp. soy sauce
- 1 tsp. sesame oil
- 1 lemon, zested and juiced
- 1/3 cup cilantro, chopped fine
- 1 head of iceberg lettuce, rinsed and dried
Instructions
Heat a large skillet over medium high heat. Add the ground turkey, minced garlic and ginger to the pan and cook until no longer pink (temp 165 degrees F) . Add the cabbage, carrots, and green onions (reserve a tablespoon or so for garnish). Cook for about 2 minutes, just until cabbage starts to wilt. Add the soy sauce, sesame oil, lemon zest, and lemon juice and stir to combine. Remove from the heat and stir in cilantro; set aside. Carefully remove individual leaves from the head of lettuce; spoon turkey mixture into the leaves, garnish with green onion and serve.
