This goulash recipe is a family favorite. We've been enjoying it for years! It's a recipe from my mother-in-law. My kids get soooo excited when they see that this is what we're having for dinner. It makes great leftovers (easy lunch or dinner the next day).
We generally serve this over elbow noodles. We like to top the hot noodles with some grated cheese and then top it with the meat sauce. However, if I'm planning to serve this with breadsticks or have dessert and want to save carbs for that, then I like to serve the meat sauce over spaghetti squash. Both are super delicious! I'm a big fan of spaghetti squash. I cook it in the instant pot. It's so fast and easy and it comes out the perfect done-ness. Overcooked spaghetti squash is not my cup of tea. To cook it in the instant pot just cut it in half, scoop out the seeds, put it in the IP with the trivet and 1 cup of water. Cook high pressure for 7 minutes and do an instant release. Remove the lid and let it cool a little before scarping out the squash.
Pretty simple, very delicious! Hope you enjoy!
Goulash {with Pasta or Spaghetti Squash}
Ingredients
- 1 pound 93% lean ground turkey
- 1 pound 90% lean ground beef
- 2 cloves garlic
- 1 (8 ounce can) tomato sauce
- 2 (14.5 ounce) cans diced tomatoes
- 1 1/2 tablespoons Italian seasoning
- 1 teaspoon salt
- 1/4 - 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon ground black pepper
- Suggested Serving Ideas (not included in MFP macros):
- -Serve over elbow noodles with or without grated cheese
- -Serve over spaghetti squash with or without grated cheese
- -Serve with a combo of squash and noodles
Instructions
Suggestion: I like to mix ground beef and turkey in a bowl with a food prep glove until it's cohesive and then start cooking it. It gives it a uniform texture.
Heat a large non-stick skillet over medium heat. Add the ground turkey, beef and garlic. Cook while stirring often and scrambling up meat. Once meat is fully cooked add the tomato sauce, diced tomatoes, Italian seasoning, salt, crushed red pepper flakes (optional), and ground black pepper. Simmer for 10+ minutes, stirring often. Simmering really helps bring out the yummy flavors.
Serve hot over spaghetti squash or noodles or a combo of both. We like to top it with some grated cheese too.
(The squash, noodles and cheese are not included in macros in MyFitnessPal)

would the macros change significantly if you used venison instead of the turkey & beef?
