Taco Salad is a favorite meal around here. We have it about once a week, because it's easy and the whole family loves it. The kids usually eat it deconstructed, or in a tortilla. Today, I wanted to share my favorite meat recipe for taco salad because I think it's super tasty!
I love ground beef, but it can be really expensive, so I really like to combine turkey and beef together for the perfect mixture of taco meat. I put both meats in a bowl and use a food service glove to combine the two together. It seems to come together best that way. I cook it with onion and garlic for added flavor. I then simmer the meat in diced tomatoes (petite diced to be exact – we like smaller chunks of tomato) and taco seasoning for an added richness of flavor.
It's easy to make ahead of time and leave on low, stirring occasionally. The left overs are great for lunch or dinner a few days later! Hope you enjoy it as much as my family does.

Taco Salad
Ingredients
- 100 g (~1 medium size) yellow onion, chopped
- 3 cloves garlic, minced
- 1 pound 93% lean ground beef
- 1 lb 93% lean ground turkey
- 1 (14.5 oz) can diced tomatoes (I like petite diced)
- 4 tablespoons taco seasoning
Instructions
In a mixing bowl combine ground beef and ground turkey. Using a food prep glove and your hand combine the meat together so they are mixed well.
In a large skillet over medium heat, combine, onion, garlic and the ground beef/turkey mixture. Cook for 10-15 until meat is browned and no longer pink. Once fully cooked, add diced tomatoes and taco seasoning and let simmer on low heat for as long as desired, stirring occasionally.
Serve with your favorite salad toppings. Some ideas are (and are not included in MFP nutrition):
Lettuce, spinach, cheese, sour cream, avocado/guacamole, salsa, red or green onion, crushed tortilla chips, etc.
