Hello! I'm here today sharing a delicious side dish featuring one of my favorite vegetables, zucchini. I don't usually make side dishes besides salad and steamed/roasted veggies. But sometimes it's really fun to round out a meal with something new. I first had these zucchini patties at my mother-in-law's house several years ago. They immediately went into my recipe book. Whether it's summer and you have a zucchini plant that is producing like mad, or you just go to the grocery store to grab a few zucchini – you'll be sure to enjoy this simple, tasty side! Plus, it's super macro friendly (see recipe below).
I really like to serve this with a side of grilled chicken (or any meat you please). Paired with a green salad, I think it's the perfectly balanced meal. And don't forget the marinara dipping sauce; it just takes the yum factor up a few notches!

Italian Zucchini Patties
Ingredients
- 200 g grated zucchini (weigh first then squeeze excess liquid out – see note)
- 1 large egg
- 3 tablespoons (46 g) egg whites
- 30 g chopped yellow onion
- 1 teaspoon Italian seasoning
- 55 g all-purpose flour
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 10 g parmesan cheese
- 90 g mozzarella cheese, shredded
- optional but recommended (not included in macros):
- marinara sauce for dipping
Instructions
Grate zucchini and squeeze out (see note below). In a medium size bowl combine all ingredients; stir until incorporated. Preheat a non-stick griddle to medium heat and lightly coat with cooking spray. Scoop and spread mixture into patties (I like mine about 3 inches in diameter) on the griddle. Cook until brown on each side and cooked through. Depending on how hot your stove is, you might want to turn the heat down. This has raw zucchini that isn't cooked, so it needs to cook roughly 7 minutes per side. I like mine with a little crisp on the outside.
We love these dipped in marinara sauce. These make a great side dish to whatever meat you want to serve alongside it. Add a green salad too and call it a meal! One serving will be a couple patties depending on how big you make them.
Notes
Note about squeezing zucchini: Place grated zucchini in a clean kitchen towel. Roll it up and hold over the sink and twist to squeeze out extra moisture. Helps it cook faster and not be soggy. You don't have to get all of it out, just some.
